Breaded Bacon Chicken Balls

Brandon is wonderful at helping with dinner on nights when things are chaotic, and once in a great while he offers to cook by himself. This was one of those nights. My husbands specialties are things like steaks and ribs, but today he made the most AMAZING chicken. I'm soo happy to share this successful recipe with you (especially since his last concoction of 'Cinnamon Chicken' was less than extraordinary)! lol


Breaded Bacon Chicken Balls
1. Cut up fresh chicken into cubes slightly larger than bite sized.
2. Wrap chicken cubes in sliced bacon.
3. Dip Chicken bacon combo into a bowl of beaten eggs.
4. Once the chicken is moist from the egg, dip into a bowl of Panko breading mix.
5. Repeat steps 1-4 until you have used up all your chicken cubes.
6. Place on cookie sheet and bake at 400 degrees for 40 minutes (or until thoroughly cooked).
7. Eat deliciously crunchy and juicy chicken!

Indian Summer, Last trip to the Beach

We had an awesome Indian Summer up here in Michigan. After some frigid temperatures for a whole month, we had 2 solid weeks of hot weather. Brandon and I wanted to take advantage of such beautiful weather so we decided to take a drive with the kids to see the fall colors and ended up at a beautiful beach in Grand Haven.

Leah ate more than a handful of dirt that day.
